This thread is 5 years old by now, but, i guess, there are always new people around like me, for example , so, in case someone else will come here searching for this info like me in the future since the game doesn't give any info on this i'll say that as far as i get it , the Chocolate bar works only for one hour, and you should keep the game running in the Zen Garden Mode to keep the Snail actively collecting the coins or for the plants to keep dropping them.

I can also confirm that The effect from the Chocolate bar remains active if you go to the Shop menu from the Zen garden, to buy stuff like Fertilizer or more plants -you won't get any coins while you in the Shop, but the Snail will remain awake and speedy after you go back to the Garden - but i'm not sure, if the effect will be kept if you go play some other mode, or restart the game and i rather think it will not.

So, if you want to get maximum profit from your chocolate bars, switch the game to the Windowed mode, feed one chocolate bar to the Snail, and go do some other stuff, like watching or reading something, for example, while leave the game working in a windowed mode in the background, letting the Snail do his job.
